Granola with Peter Brondz
/Peter Brondz shares his granola recipe featuring 1 quart of local honey!
6 cups thick-cut #3 rolled oats
1 cup chia + 1 cup flax
2 cups pumpkin seeds
4 cups chopped almonds
2 cups chopped pecans
1 cup chopped sesame seeds
1 cup chopped coconut (optional)
2 tsp salt
1 cup Mexican vanilla
1 quart of honey, warmed up for easy mixing
2 cups corn oil
2 Tbl ground cardamom
2 Tbl ground cinnamon
1 Tbl nutmeg (optional)
Warm honey so it flows. Mix all the ingredients in a big bowl. Roast in the oven at 375 degrees, stirring often. It will toast more evenly if the granola is not layered more than 2” thick in the roasting pan. Cool before bagging. Stores well in the freezer. Delicious with fresh fruit!
